Baked Pesto Ravioli
2 packages of fresh ravioli or 2/3 bag (20ish oz) of frozen ravioli
1 cup vegetable broth
1/3 cup heavy cream
1/4 cup fresh basil pesto
2 tbsp butter
3-4 plum tomatoes, sliced thinly
1 cup mozzarella, crumbled (please use freshly crumbled and not the kind in bags)
